Pumpkin Bread

Ingredients
  • 1 cooking pumpkin
  • 4 eggs
  • 1 cup oil
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 4 cloves
  • 1/3 whole nutmeg
  • seeds from 3 cardamom
  • 3 peppercorns
  • 6 oz cranberries
  • 6 oz walnuts
  • 1/2 cup wheat germ

Directions
Halve the pumpkin and remove seeds. place in dish in oven at 375 for 45 minutes.
Scoop the pumpkin into a small mixing bowl. It should be about 2 cups of pumpkin. Blend the pumpkin and the oil. Beat the eggs and add to the pumpkin. Add the vanilla and mix well.

In a large mixing bowl combine all the dry ingredients and the spices. Fold the pumpkin mixture into the dry ingredients, mixing until just combined. Don't over mix.

Fold in the cranberries, walnuts and wheat germ. if you use the wheatgrem you may need to add a bit of milk to keep the batter from becoming too stiff.

Split batter between two breadpans and cook for 1 hour 10 minutes at 375.
